Amiot-Servelle is a small, sought-after winery with great vineyards and very limited availability. Neil Martin (Wine Advocate) said, "Amiot-Servelle is one of those domaines that has just found its groove, located its mojo in recent vintages and given their enviable holdings that include Chambolle Amoureuses, Clos Saint-Denis and Charmes-Chambertin, there is inevitably going to be great wine pouring out of this address." The "mojo” is related to the younger generation as Christian and Elisabeth Amiot handed down the family winery to their son, Antoine, and daughter, Prune, who is the principal winemaker. At all stages, from certified organic farming of the soil to bottling, family know-how (along with some technology) guide the process of making great wine. Their wines lean towards more black fruits than red, and are typically benefited by additional cellar aging.
