
Gilles Remoriquet owns almost 10 hectares of vines in Nuits-Saint-Georges and Vosne-Romanée, including several premier crus. Gilles, a fourth generation vigneron (also trained in classic winemaking techniques at the University of Dijon), opts to produce wines using traditional winemaking techniques. For example, he prefers to keep the grape skins in contact with the wine longer than some during fermentation in order to obtain a gentle extraction of aromas, colors and tannins, and an optimum expression of the terroir. Indeed, before harvest, he tastes grapes of each parcel to determine the maturity of the skins and to ensure supple, non-aggressive tannins. As his wines age well, Gilles often holds back a portion of his production to be able to offer wines with cellaring built-in!
